I made this on another crafty Sunday with my friends. It's made out of polymer clay, wire, glitter, yarn and beads. I used a mold for the face. Art-enabling friends are the best!

Spinach Alfredo Lasagna

This is my recipe for the lasagna me and my friends feasted on in One Crafty Sunday.

2 cups dry cottage cheese
1 egg
1/2 cup parmesan cheese
3-4 cups grated mozza
1 jar Classico alfredo sauce
1/4 tsp pepper
1 pkg of frozen chopped spinach (thawed and drained)
9 cooked whole wheat lasagna noodles (I just cook them for 10 minutes)

1. In a bowl mix egg and cottage cheese. Add parmesan cheese. Then stir in grated mozza.
2. In another bowl add most of the jar of alfredo sauce (leave a bit for the top of the lasagna). Mix in pepper and spinach.
3. Put three spoonfuls of the alfredo mix in the bottom of a lasagna pan. Layer 3 noodles. Add half the cottage cheese mixture. Top with half of the remaining alfredo mix. Repeat layers. On top layer of noodles spread leftover sauce in jar and sprinkle with pepper.

Cover with foil and cook for approx. 45 minutes at 350 degrees. Let stand for 5 minutes (or however long you can wait).

One Crafty Sunday

At least one Sunday a month me and my friends get together for crafty fun. Here's a pic of the cross stitch I worked on at January's day of craftiness. I got the kit for 10 cents.

Then we feasted on salad, spinach alfredo lasagna and bread.

Funky Socks




I bought some super cool sock yarn yesterday ~ Patons Kroy Sock Yarn in Winter Eclipse . Yay for Michaels gift cards! So now I'm searching for an equally cool pattern. I'm thinking of doing the William Street Socks from Knitting Daily's Sock Pattern e-book because I heart cables.
